GEORGE BRETT'S MEATLOAF
1/2 cup milk 2 lightly beaten eggs
2 slices white bread, 2lbs ground chuck
crust removed 4oz bulk Italian sausage
[we mix the ground chuck and Italian sausage half and half]
1/2 cup chopped onion 1 clove minced garlic
1/4 cup finely chopped celery 1 tsp Worchestershire sauce
1/4 cup finely chopped green 1/4 tsp black pepper
sweet pepper
For the glaze:
6 Tbsp light brown sugar 1/2 cup ketchup
2 tsp dry mustard 2 tsp white vinegar
Preheat oven to 325 degrees. Combine milk and eggs in a small mixing bowl.
Ad bread, pushing down to cover with liquid. Let stand 1 to 2 minutes to soak
well.
Combine other ingredients in a large mixing bowl. Add milk-bread mixture.
Mix well but do not over mix. Shape into a loaf. Place in a large shallow
baking pan. Do not bake in a loaf pan. Bake 45 minutes.
Combine the glaze ingredients. Stir well to dissovle sugar and mustard.
Spread glaze over meatloaf. Bake 15 minutes or until thermometer registers 160
degrees.
